What you need to make sweet corn fritters:

Ingredients:

 

  • 2  cups – Fresh Corn, Frozen (thawed) or Canned (drained)
  • ¾  Cup – All-purpose Flour
  • ¼  Cup Cornmeal
  • 1 ½  Tsp. Baking Powder
  • 1 ½  Tbsp.  Melted Salted Butter
  • ½  teaspoon Salt (optional)
  • 1 ½  teaspoon  Sugar
  • 1 Egg 
  • ½ -¾ Cup Whole Milk
  • Vegetable Oil

How to Make Easy Sweet Corn Fritters:

Start by preparing the fresh corn on the cob aka shuck the corn cob. Peel back the outer leaves and silk exposing the corn cob. Grab a hold of the top and pull it off the bottom, removing the leaves silk and tassels. If some strands of silk are left, take a wet paper towel over the corn to remove them. 

Using a sharp knife, cut the bottom off leaving it flat. Hold the top of the corn and slide the knife down the corn to remove the corn kernels. Be sure to get the white creamy stuff under the kernels because that is where a lot of the sweet flavor is. Place the bowl of corn aside.

If you don’t want to do all this prep, you can always use frozen or canned corn. We love to use fresh but not everyone has the time. They will still taste great with canned or frozen sweet corn.

Pour the milk into mixture and stir until all is well combined (you may need to adjust the amount of milk you add depending on how thick or thin you want your batter and fritters to be).

In a bowl, whisk together flour, cornmeal, baking powder, salt, and sugar. Then add melted butter, egg (beat the egg first), corn, and mix it together.

Preheat your cast iron skillet on medium heat, then add just enough oil to cover bottom of skillet (1/8” – 1/4”). 

 

Once the oil is hot, drop batter by spoonful into skillet to the size fritter you want. Cook the fritters about 3 – 4 minutes on each side until golden brown (adding more oil to skillet between each batch if needed) (also, be sure to remove any kernels from oil before starting the next batch).

Then, place fritters on a dish lined with paper towels. Serve hot with your choice of, butter, honey, maple syrup, (Miss Sheila likes hers in milk!) or just plain… they are delicious!
