It’s a perfect recipe to serve with greens and beans a Southern favorite!
Start by preheating the oven to 400 degrees.
In a medium bowl, combine cornmeal, self-rising flour, mayo, buttermilk, butter and eggs. The mayo is the key and helps the cornbread stay moist. As you mix add a little water to get the right creamy consistency. You really want it to be creamy enough to pour into the skillet.
Add vegetable oil into the cast iron skillet, then using a paper towel, spread it evenly in the skillet removing any excess oil. Sprinkle a teaspoon of cornmeal over the oil then, pour the cornbread mixture into the cast iron skillet spreading it evenly.
Bake uncovered for about 25 minutes until golden brown. Serve warm with butter and your favorite meal.
This is perfect to serve with Southern greens and beans which is a staple in the south.
