Hunter, fisher, trapper, trader, guide, scout, and interpreter, Steve Hall Shotgun Red loved the great outdoors. Steve spent many days on the houseboat with family and friends, fishing and having fish fries! Steve created a few different fish breading mixes over the years. He sold one recipe to a company called Fryinsaucer. He created another boxed version of Shotgun Red’s Catfish and Crappie Breading Mix, but unfortunately, we no longer offer the boxed version for sale. Here is one of our favorites. This recipe is similar and a great substitute!
If deep frying the fish, heat oil to 360F degrees.
In a bowl, mix all the ingredients together.
Prepare the fish filets and place them in water, then shake off any excess water.
Dredge the fish into the breading mix, shaking of any excess again then place the fish directly into the frying pan.
Cook the fish until golden brown (when deep frying, flip the fish once; once the fish floats back to the top, cook for one more minute, then remove from the oil).

If you want to store this, add some citric acid to store it. Place it in an air-tight mason jar in a cool, dark place.
