Santa Fe Beef Stew Recipe

How to make Santa Fe Stew:

In a Dutch oven or stock pot over medium heat, add olive oil, lean ground beef onion, ranch season and taco seasoning. Mix it together, cover and cook until brown and no longer pink. 

 

Then uncover, and add bell pepper, and garlic. Mix, cover and cook for another 3 to 5 minutes until bell pepper has softened.

Then add cans of Rotel tomatoes and green chilies, corn, green chilies, pinto beans, and black beans. Mix, cover and let it simmer on low for about 15 minutes.

 

Top with cheddar jack cheese, sour cream and serve with warm rolls, Indian fry bread or cornbread.

Ingredients

  • 2 lbs. Lean Ground Beef
  • 1 Tbsp. Olive Oil
  • 1 cup Sweet Onion (diced)
  • 1 Packet Ranch Dressing Seasoning
  • 1 Packet Taco Seasoning
  • 1 Green Bell Pepper (diced)
  • 1 Tsp. Garlic (minced)
  • 2 Can Rotel Diced Tomatoes and Green Chilies
  • 1 4oz. Can Green Chilies (diced)
  • 1 Can Sweet Yellow or White Corn (drained)
  • 1 Can Pinto Beans (drained)
  • 1 Can Black Beans (drained)

Toppings:

  • Shredded Cheddar Jack Cheese
  • Sour Cram
