Looking for a delicious and hearty dish? Then try Santa Fe Beef Stew. It’s homemade comfort food in a bowl that’ll fill you up! Also know as Santa Fe Stew this dish is sure to make your taste buds happy!
In a Dutch oven or stock pot over medium heat, add olive oil, lean ground beef onion, ranch season and taco seasoning. Mix it together, cover and cook until brown and no longer pink.
Then uncover, and add bell pepper, and garlic. Mix, cover and cook for another 3 to 5 minutes until bell pepper has softened.
Then add cans of Rotel tomatoes and green chilies, corn, green chilies, pinto beans, and black beans. Mix, cover and let it simmer on low for about 15 minutes.
Top with cheddar jack cheese, sour cream and serve with warm rolls, Indian fry bread or cornbread.
