  • 1 cup Buttermilk (cold)

Instructions

  1. Preheat oven to 450 degrees.
  2. In a bowl, add two cups of flour and whisk for about 1 minute (or you can sift the flour). Add in 6 tbsp. of cold butter cut into small chunks, and blend with a pastry cutter or blending fork until the butter pieces are about the size of a pea (you can also do this by hand). Then create a small well in the middle of the flour mixture and pour in the cold buttermilk a little at a time while mixing. You do not want to overmix, just enough so that the ingredients are combined. You may need to add a little more flour if it’s too sticky.
  3. On a flat surface, spread a little flour and place the dough on it. Knead the dough by folding it over about 5 to 6 times until it’s soft and no longer sticky. Form the dough into a ball, pat down, and spread it out until it is about ½ inch to ¾ inch thick. Using a biscuit cutter, dip it into a bowl of flour, then cut out the biscuits.
  4. Place them on some parchment paper or directly into a warm buttered cast iron skillet. Once in the cast iron skillet, place it in the oven and bake for 15 minutes, or until they turn golden brown. Remove from the oven and baste with butter while hot, then serve!

 

Notes

If you don’t have buttermilk, you can use 1 cup of whole milk and 1 Tbsp. of White Vinegar and let it sit for about 5 min.
