One Pot Lasagna Soup

Step-by-step instructions

In a Dutch oven on medium heat, add ground beef and ground Italian sausage. Chop it up, then add onion and cook until the meat is no longer pink, then add minced garlic. Cover and let it simmer for about 1 minute.

Then add, diced tomatoes, tomato sauce, beef broth and seasonings. Mix it together, cover and let it simmer until it comes to a boil.  Break each piece of uncooked pasta into 4 to 5 pieces. Once the soup comes to a boil, uncover, and add the pieces of pasta into the soup. Gently stir and let it simmer until the pasta is cooked Al Dente (gently stir occasionally while simmering).

While it’s simmering, make the ricotta cheese topping. In a small bowl, add Ricotta cheese, grated Parmesan cheese, Italian seasoning, garlic powder, and basil. Mix it together and set it aside.

 

When the pasta is cooked, give it a stir, and spoon it into a soup bowl. Then top with a couple spoons of the Ricotta cheese topping, and sprinkle with parmesan cheese, shredded mozzarella cheese, and some basil.

Ingredients

  • 1 lb. Lean Ground Beef
  • 1 lb. Ground Italian Sausage
  • 1 Sweet Onion (diced)
  • 2 Tsp. Garlic (minced)
  • 1 15oz. Can Tomato Sauce
  • 1 15oz. Can Diced Tomatoes
  • 5 cups Beef Broth
  • 1 Tbsp. Italian Seasoning
  • 1 Tsp. Black Pepper
  • 1/2 Tsp. Red Pepper Flakes
  • 8 oz. Lasagna Noodles (uncooked and broken into 4 or 5 pieces)

Cheese Topping:

  • 1 Container 15 oz. Ricotta Cheese
  • 1/2 cup Grated Parmesan Cheese
  • 1 Tsp. Italian Seasoning
  • 1 Tsp. Garlic Powder
  • 1/2 Tsp. Basil

Additional Toppings:

  • Mozzarella Cheese (shredded)
  • Parmesan Cheese (grated, shredded or both!)
  • Basil
