What you need to make old-fashioned Chocolate Meringue Pie

Ingredients:

Pie Filling: 

  • 1 Cup Granulated White Sugar
  • 4 Tbsp. Unsweetened Cocoa Powder
  • 4 Tbsp. Self-Rising Flour
  • ¼ Tsp. Salt
  • 2 Egg Yolks
  • 2 Cups Milk
  • 1 Tsp. Vanilla
  • ½ Stick Butter

Meringue:

  • 4 Egg Whites
  • ¼ to ½ Cup Granulated White Sugar
  • ¼ Tsp. Cream of Tartar
  • 1 Tsp. Vanilla Extract

Garnish:

  • Chocolate Shavings

How to make Mom's Chocolate Meringue Pie

Bring the pie crust to room temperature before baking.  Then prick the bottom of the crust with a fork.  Preheat the oven to 400 degrees.  Bake the pie crust for 10 to 12 minutes, or until light golden brown.  Remove it from the oven, place on a wire rack and let it cool.

To Make the Chocolate Pie Filling: In a microwave-safe bowl, whisk together the white sugar, cocoa powder, self-rising flour, and salt.  Pour in about ½ cup of the milk and whisk until combined.  Then add the egg yolks and stir until well blended. 

Slowly pour in the remaining milk and stir until the pie filling is smooth, then add the butter.  

Place in the microwave and cook for 5 to 6 minutes, stirring every couple of minutes until the pie filling has thickened and is a pudding consistency.

Remove from the microwave and add the vanilla. Then pour it into the baked pie crust smoothing with out evenly and let it cool on a wire rack while you make the Meringue.

To Make the Meringue:

In a bowl, add the egg whites, and beat them with an electric hand mixer on high speed until they form soft peaks.  Then turn the speed down to low and add the sugar (you might need to add a little more sugar to help thicken as you go), cream of tartar, and vanilla and beat until the egg whites form stiff peaks.

Gently spoon the meringue on top of the pie filling and spread it to the edge of the pie crust.  Place the pie in a preheated oven and bake at 400 degrees for 3 to 4 minutes, or until the meringue turns golden brown.  Remove from the oven and let it cool on a wire rack, then place in the refrigerator to chill for about 2 to 4 hours.
