Start by preheating the oven to 350 degrees. Prepare the corn tortillas by cutting them into quarters or strips. You can use white or yellow corn tortillas. If you prefer you can also use flour tortillas.
In skillet on medium heat melt butter, then add onion and bell pepper and cook until tender. Add in minced garlic (you can use fresh or garlic powder also) and cook for about one minute until fragrant. Be sure not to let the garlic burn. There is nothing worse than burnt garlic!
Then add shredded or diced chicken (we shredded up 2 cups of a rotisserie chicken), seasonings, cream of chicken soup, cream of mushroom soup, diced tomatoes and green chilies (we use Rotel, drained), and a can of chopped green chiles (undrained). Mix all of the ingredients until it is well combined.
Stir in ½ cup of each of the shredded cheese until the cheese is melted, then remove from heat. The cheese really makes this dish.
In a pre-greased 9×13 baking dish, add a layer of tortillas. Then spoon ½ of the chicken mixture and spread it evenly over the tortillas. Sprinkle with both types of shredded cheese, evenly reserving some for the following two layers. Repeat the previous steps until the dish is full, then add a final layer of tortillas and top with the remaining shredded cheese.
Your oven should be preheated to 350 degrees. Bake it in the oven uncovered for 30 minutes until tortillas get a little crispy and golden brown on the edges, and the cheese is melted. Let it sit for about 10 minutes before you serve. We like to top it with sour cream. This is an amazing, flavorful casserole, and you will definitely come back for seconds! It has become a staple casserole in our households.
