to make pancakes, in a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
Is baking soda or powder better for fluffy pancakes? Grandma used both in her recipe.
Then add the eggs, canola oil, slightly cooled melted butter, pure vanilla extract, and whole milk. Blend all ingredients with an electric hand mixer for about 1 minute (batter will be smooth and not too thick (a few lumps are okay….so don’t overmix it).
Pour a little canola oil on the griddle and preheat the griddle on medium heat. Pour a small amount of the batter on the hot griddle and use a spoon to spread the batter into pancake-sized rounds.
Cook your pancakes until you get bubbles around the edges and a few bubbles starting in the middle, check to see if browned then flip them over with a spatula and spread some butter on top of the pancake to melt while the underside cooks until browned.

2 Tbsp. Sugar
2 Tsp. Baking Powder
1/2 Tsp. Baking Soda
1/2 Tsp. Salt
