In a cast iron skillet on medium heat, add ground beef and onion. Cook until it’s no longer pink.
Add in Taco seasoning, cumin, red pepper flakes, and chili powder. Then stir in the minced garlic and let it cook for 1 to 2 minutes.
Add in Rotel, tomato paste, and half of the diced green chilies.
Mix Masa with equal amount of water then stir it into the mixture. Let it cook for about 2 to 3 minutes. Then stir in kidney beans.
Sprinkle a layer of ½ of the Cheddar Jack cheese, then about half of the Fritos. Then sprinkle half of the shredded Cheddar Cheese on top.
Gently spoon the meat mixture over the first layer of Fritos and cheese, and then sprinkle a layer of the remaining Fritos and cheese over the top.
