How to make Crockpot Hamburger Potato Soup Recipe

Ingredients:

  • 2 lbs. Ground Beef
  • 2 Tsp. Worcestershire Sauce
  • 1 Medium Sweet Onion (diced)
  • 2 Tsp. Minced Garlic
  • 1 Tsp. Garlic Salt
  • 1 Tsp. Onion Powder
  • ½ Tsp. Cumin
  • 2 Tsp. Better than Bouillon Chicken Flavor
  • 1 Tsp. Rosemary
  • 2 Tsp. Salt
  • 1 Tsp. Pepper
  • 1 Cup Carrots (sliced)
  • ½ Cup Green Onions
  • 1 Cup Fresh Spinach
  • 1 Cup Sweet Frozen Corn
  • 5-6 Potatoes (cubed)
  • 5 Cups Chicken Broth
  • 1 Cup Milk
  • 2 Tbsp. Cornstarch
  • 2 Cups Shredded Cheddar Jack Cheese

Instructions:

This is a great budget friendly meal you can make anytime. We start out by prepping our veggies and potatoes. We cut them into bite size pieces. You can use any kind of potatoes, we used Yukon Gold potatoes in this recipe.

Then in a skillet on medium heat, add ground beef, Worcestershire Sauce, and onion and cook until beef is no longer pink.

Add in minced garlic and cook for one minute, then remove skillet from heat.

Pre-grease crockpot and pour in the cooked ground beef mixture. Then sprinkle all of the seasonings over the meat (reserve half of the salt and pepper to add at the end). Add green onions, carrots, spinach, corn, and potatoes. Pour in 5 cups of chicken broth and mix it together, cover, and cook on low for a total of 6 hours.

Thirty minutes before it’s done, add remaining salt and pepper. Then, in measuring cup, whisk cornstarch into the milk, then pour over the vegetables and meat to thicken the broth (for a thicker broth you can add a little more cornstarch). Add shredded cheese, mix it in and cook for another 30 minutes.
