Creamy Loaded Potato Soup

Looking to indulge in a comforting bowl of creamy loaded potato soup? Look no further!

Ingredients

  • 4 Potatoes (peeled and cut into small cubes)
  • 1 1/2 cups Cheddar Cheese
  • 1/2 cup Sour Cream
  • 3 cups Whole Milk
  • 3 cups Chicken Stock
  • 8 Slices of Bacon (chopped)
  • 4 Tbsp. Butter
  • 4 Tbsp. All-Purpose Flour
  • 1 Yellow Onion (finely diced)
  • 1/2 Tsp. Salt
  • 1/2 Tsp. Peppers
  • Garnish with Chopped Green Onions

Instructions

  1. In a large pot, cook the bacon on medium heat until crispy, then place the bacon on a plate with paper towels and set aside.
  2. Then add butter in the pot with the bacon grease.  When the butter is melted, add onions and saute’ for 2 to 3 minutes until tender.
  3. Add flour and stir constantly with a whisk for 2 minutes until flour is cooked.
  4. Pour in the milk (stirring constantly) and then the chicken stock, and bring to a simmer
  5. Then add the potatoes, partially cover with a lid and simmer for another 20 minutes, or until potatoes are fork tender.
  6. Add in sour cream, cheddar cheese, and the cooked bacon. Then season with salt and pepper (to taste), and let the soup simmer for 5 more minutes.
  7. Garnish with chopped green onions and enjoy this cheesy, creamy and delicious soup!
