Cooking Chorizo and Eggs

In a skillet on medium heat, add the Chorizo. Chop it up and cook until it starts to liquefy. Once it does, let it simmer on medium heat for about 10 minutes, or until the sausage gets a little brown and is thoroughly cooked.

The sausage has plenty of flavor so there is no need to add any additional seasoning.

In a separate bowl, whisk eggs and pour them into the sausage. Reduce the heat to medium-low and scramble the eggs mixing it continuously into the sausage until it’s done.  Once the eggs are cooked to your liking, remove the skillet from the heat.

  • 8 Flour Tortillas
