One-Pot Chicken Spaghetti: Simple & Savory Comfort Food

Chicken Spaghetti Dutch Oven

What is chicken spaghetti made of?

  • 2 Cups Cooked Chicken (shredded)
  • 1 lb. Spaghetti Pasta
  • 1 Tbsp. Olive Oil
  • 2 Tbsp. Butter
  • 1 Tsp. Garlic (minced)
  • 1 Cup Sweet Onion (diced)
  • 1 Medium Red Bell Pepper (diced)
  • 1 Tsp. Garlic Powder
  • 1 Tsp. Onion Powder
  • ½ Tsp. Paprika
  • 1 Tbsp. Italian Seasoning
  • 1 Tsp. Salt
  • 16 oz Velveeta Cheese Block (cubed)
  • 8 oz Cream Cheese (cubed)
  • 2 Cans Condensed Cream of Chicken Soup
  • 1 Can Rotel (tomatoes and green chiles mild)
  • 1/3 Cup Milk or Half and Half
  • 1 ½  Cups Sharp Cheddar Cheese (shredded)
  • 2 Tbsp. Parmesan Cheese (grated)
  • 1 Tbsp. Parsley

How to make Chicken Spaghetti

Preheat oven to 350 degrees.

In a Dutch oven on medium heat add olive oil and butter. Once the butter is melted, add onion, and bell pepper and cook until tender. Then add minced garlic and cook for about one minute.

Then add cooked shredded chicken. Season with, garlic powder, onion powder, paprika and Italian seasoning.

Add two cans of condensed cream of chicken soup, 1 can of Rotel, Velveeta cheese and cream cheese. Stir until the cheese is melted then remove heat. 

Fill a stock pot ¾ full of water and bring to a boil. Add a teaspoon if salt then add pasta and cook pasta about 3-5 minutes less than the package instructions or until aldente. Drain the pasta but don’t rinse.

Add milk into chicken mixture and stir until creamy. Then add the spaghetti pasta and toss until combined. 

 

Sprinkle a little sharp cheddar cheese on top then cover and place in the oven. Bake for 20 minutes, then remove the cover. Add little more shredded cheddar on top and let it melt for about 3-5 minutes, then remove from the oven.

Sprinkle with grated parmesan cheese and parsley and serve.

How long does chicken spaghetti last in the fridge?

You can store in an airtight container for about 3 days in the refrigerator. You can freeze this dish for up to three months.
