Set the pie crusts out at room temperature for about 10 minutes.

Then unroll one of the pie crusts onto a piece of parchment paper. Using a cookie cutter, cut out about 10 (Christmas Trees, Hearts, etc.) and place them onto a baking sheet lined with parchment paper. Repeat with the second pie crust.

Whisk the egg to make an egg wash. Brush the edges of 10 of the cut outs with the egg wash using a small pastry brush. Then spoon a small amount of pie filling into the middle of the shape (about two cherries each, be careful not to overfill).

Gently place the other 10 cut outs on top. Then using a fork, crimp the outer edges of the dough together all the way around to seal each hand pie together (be careful not to press down on the filling).

Take a sharp knife and cut a couple of small slits across the top of each pie to allow the filling to vent. Then brush each pie with the egg wash, and sprinkle some coarse sugar on top (green, red etc.).

Place the pies into the oven and bake for about 15 to 20 minutes, or until golden brown. Remove from the oven, let them cool on a cooling rack, and serve these tasty treats!
