What you need to make Mac and Cheese Meatloaf Casserole

INGREDIENTS:

  • 2 lbs. Lean Ground Beef
  • 1 Cup Ketchup (divided)
  • 1 Cup Barbecue Sauce (divided)
  • 30 Ritz Crackers (crushed)
  • 1 2oz. Packet Lipton Onion Soup Mix
  • ½ Cup Diced Sweet Onion
  • 2 Eggs
  • 3 Cups Elbow Macaroni 
  • 2 Cups Whole Milk
  • 2 10.5oz Cans Condensed Cheddar Cheese Soup
  • 1 Tsp. Garlic Salt
  • 1 Tsp. Pepper
  • 2 Cups Shredded Cheddar Cheese (divided)
  • 2 Cups Shredded Mozzarella Cheese (divided)

How to make Mac and Cheese Meatloaf Casserole

Preheat the oven to 350F degrees.

 

In a small mixing bowl, combine ketchup and barbecue sauce then set it aside.

 

In a large bowl, add the ground beef, crushed Ritz crackers, Lipton onion soup mix, diced onion, and eggs then mix it all together. Pour in ½ of the ketchup barbecue sauce mixture and mix it into the meat.

Press the meat mixture evenly into a 9 x 13 baking dish. Spread the remaining ketchup barbecue sauce evenly on top. Place it in the oven and bake for 30 minutes. 

While it’s in the oven, cook the macaroni al dente according to package directions, then drain.

In a medium mixing bowl, whisk together milk and condensed cheddar cheese soup until it is combined. Then whisk in garlic salt and pepper. Pour the cheese sauce and stir it into the cooked macaroni. Then add 1 cup of shredded cheese and 1 cup of Mozzarella cheese and gently mix it in macaroni.

Remove the meatloaf from the oven. Pour the cheesy macaroni mixture on top spreading it evenly. Sprinkle the remaining cheese on top.

 

Bake for an additional 17-18 minutes, until the cheese is melted and starting to brown. Let rest for a few minutes before serving and enjoy this delicious casserole.
