If you love corndogs, you are going to love this corn dog casserole with chili. This is budget friendly and super easy to make.
Preheat oven to 350 degrees.
In a skillet on medium heat, add lean ground beef, onion, and seasoning. Cook until brown.
Then add, cans of Rotel and chili beans and let simmer for about 5 to 10 minutes.
In a medium bowl, add Jiffy corn muffin mix, eggs, and milk. Mix until combined and set aside.
Grease a 9 x 12 baking dish. Pour the chili mixture into the baking dish and place the hot dogs evenly across the top of the chili.
Spoon corn muffin mixture over hot dogs evenly.
Place it in the oven and bake for 25 minutes, or until golden brown and toothpick inserted in the corn muffin comes out clean.
Sprinkle shredded cheese on top, turn the oven off, and let it sit in the oven until cheese is melted.
Remove from the oven and serve with sour cream, shredded cheese, and any other favorite toppings you like and enjoy!
