In a large bowl, add 3 ½ cups of finely chopped cabbage and 1 whole finely chopped carrot.
Then in a separate bowl, add ½ cup mayonnaise, 5 tbsp. sugar, 3 tbsp. apple cider vinegar, ½ tsp. onion powder (not onion salt), ½ tsp. salt, and ½ tsp. pepper. Mix it together well and place in the refrigerator for three to four hours along with the bowl of the chopped up cabbage mix.
Remove from the refrigerator and stir the salad dressing, then pour over the chopped cabbage and toss until coated well. Place it back in the refrigerator to chill for about an hour then serve!
Coleslaw will last 3 to 5 days in the refrigerator. Never leave it at room temperature for longer than 2 hours so bacteria won’t grow.
