5 Strips Bacon (diced)
1 Cup White Onions (diced)
1 Cup Celery (diced)
1 Cup Green Bell Pepper (diced)
2 Cups White Long Grain Rice
4 Cups Water
1 Tsp. Salt (divided)
2 15oz. Cans Tomato Sauce
1 15oz. Can Diced Tomatoes
1 Tbsp. Black Pepper
13.5 oz. Package Andouille Sausage
Preheat the oven to 350 degrees.
In a skillet on medium heat, fry bacon and cook until it is soft, and do not drain the grease.
In that same skillet with the bacon, add onions, celery, and green peppers. Sauté them until veggies are soft, remove from heat, and set aside.
In a small Dutch oven on medium heat, add the white rice with the water and a ½ tsp. of salt. Cook the rice according to package instructions. Then once the rice is cooked, stir in the tomato sauce and diced tomatoes.
Then add the bacon mixture with cooked vegetables. Season with ½ tsp. salt and 1 tbsp. of black pepper and mix well.
Slice up the Andouille sausage into ¼ inch pieces and fold it into the rice mixture, reserving a few slices for the top.
Bake uncovered in the oven for 45 minutes, serve and enjoy!
