If you are craving some Mexican for dinner tonight, you must try this delicious beef taco pie recipe. It’s super easy to make and full of flavor.

Ingredients

Units Scale
  • 1 Premade Pie Crust
  • 1 lb. Lean Ground Beef
  • 1 cup Sweet Onion (diced)
  • 2 Tbsp. Taco Seasoning
  • 1 cup Sweet Corn
  • 1 Can Rotel (diced tomatoes and green chilies)
  • 1/2 cup Chili Con Queso Cheese Dip (medium)
  • 2 cups Mexican Blend Cheese (shredded, divided)
  • 1/2 cup Tortilla Chips (crumbled)
  • 1 cup Sour Cream
  • 1 1/2 cups Shredded Lettuce
  • 2 Roma Tomatoes (diced)
  • 1/2 cup Black Olives (sliced)

Instructions

  1. Preheat oven to 450 degrees.
  2. Unroll the refrigerated pie crust dough into a 9-inch glass pie dish. Gently press the crust onto the bottom and sides of the pie plate until it’s even. Using a fork, poke holes in the bottom of the pie crust to prevent bubbling. Place it into the oven and bake for 10 – 12 minutes, or until light golden brown. (If using a pre-made frozen pie crust, follow package directions).
  3. In a large skillet on medium heat, add lean ground beef, onion, and taco seasoning, and cook until the ground beef is no longer pink. Drain any excess grease. Then add tomatoes and green chilies, corn, chili con queso, and 1 cup shredded cheese, and mix it together.  Cover and remove from heat once the cheese is melted.
  4. Spoon the meat mixture evenly into the cooked pie crust. Sprinkle ½ cup of shredded cheese, sprinkle crumbled corn chips on, and then top it with the remaining shredded cheese.
  5. Bake it in the oven at 375 degrees for about 5 minutes or until the cheese has melted. Remove from the oven and let cool for about 15 minutes.
  6. Top with a layer of sour cream, shredded lettuce, tomatoes, and olives. Enjoy this delicious taco pie.
