Split Pea Soup with Ham

  • 1 Tbsp. Olive Oil
  • 1 Medium Sweet Onion (diced)
  • 1 Tsp. Minced Garlic
  • 4 cups Low-sodium Chicken Broth
  • 4 cups Water
  • 1 16 oz. Bag Dried Split Peas (picked through and rinsed)
  • 2 Bay Leaves
  • 1Tsp. Fresh Thyme (chopped)
  • 1 Meaty Ham Bone or Ham Shank
  • 1 cup Carrots (finely sliced)
  • 1 cup Yellow or Red Potatoes (chopped, optional)
  • 1 Tsp. Black Pepper
  • Fresh parsley, for garnish (optional)
  • Season to taste

Instructions

  1. Prepare the split peas by laying them out on a baking sheet and picking the rocks or hard pieces out, then place them in a colander and rinse them. You don’t need to soak them. Then, place them aside.
  2. In a stock pot or Dutch oven on medium-low heat, add olive oil and onions. Sauté until the onions are tender, then add minced garlic and cook for another couple of minutes.
  3. Then, place the meaty ham bone into the pot and add chicken broth, water, thyme, and bay leaves. Bring it to a low boil, cover it, and let it cook for about 60 minutes, stirring frequently.
  4. Uncover and remove the ham bone and place it on a platter. Remove the excess meat from the bone, slice it into small pieces, and place the ham pieces back into the pot. Add carrots, potatoes, and pepper, then cover, and let it cook for about 10 to 15 minutes or until the carrots and potatoes are fork-tender.
  5. Uncover and remove from heat. Serve with your favorite bread, biscuits, or crackers, and enjoy this delicious, hearty soup!

Notes

Note: When you rinse the peas, they may get sticky and stick together this is normal. Just gently break them apart when you add them to the broth in the pot.
