If you love shrimp, you will love this recipe for Shrimp Scampi Pasta. Delicious buttery garlic wine sauce on a bed of spaghetti and topped with Parmesan cheese.
1 1/2pounds of Raw Shrimp (Peeled, Deveined, and Tail off)
1–2 Tbsp of Olive Oil
1 tsp Salt and Pepper
3 Tbsp Minced Garlic
1cup of White Wine (white cooking wine)
1 Stick of Salted Butter plus 2 Tbsp
1/2 tsp Red Pepper Flakes
1–2 Green Onions or Chives (chopped)
1/2cup of Fresh Chopped Parsley
1–2 Tbs Grated Parmesan Cheese
Fresh Lemon (optional)
Serve on Spaghetti or pasta of your choice
Instructions
Cooking the shrimp: In a bowl, coat shrimp with olive oil and season with salt and pepper. In a skillet on medium high heat, add 2 Tbsp of butter and cook raw shrimp on both sides until no longer translucent and they are pink in color. If using precooked shrimp, cook in skillet for 1-2 minutes.
Remove shrimp from pan and set a side before making sauce. Cooking Pasta: In a stock pan, bring water to a boil. Add in 1 teaspoon of salt, 1 tbsp of Olive oil and pasta of your choice. Boil until pasta is cooked then drain then set aside. (Tip: Add a little Olive oil to keep pasta from sticking) Making the sauce: In that same skillet on medium low heat, add olive oil if needed and melt 1 stick of butter. Add finely chopped garlic and cook for 2 minutes then add green onion. Pour in your white wine and add red pepper flakes. Simmer for about 3 to 4 minutes to allow the alcohol to cook off.
Add your cooked shrimp back in your pan. Let simmer on medium heat for another 3 to 4 minutes. Remove from heat once shrimp is fully cooked and pour sauce and shrimp over your pasta. Garnish with fresh parsley, grated parmesan cheese, and a squeeze of fresh lemon! That’s it! Delicious buttery garlic shrimp scampi.
