In a bowl, add cornstarch and water and whisk together until smooth to make a slurry. Then add the chicken wings into the bowl and coat well with the slurry.
In a deep fry pan, add vegetable oil (about 2 inches deep) and heat to 350 degrees. Fry chicken wings in batches about 9 – 10 minutes, or until golden brown (do not overcrowd the fry pan when frying each batch). Remove the wings and place them on a plate lined with paper towels.
In a saucepan, add peanut butter, grape jelly, soy sauce, sriracha sauce, and orange juice, and stir together until creamy. Then add 1 tbsp. chopped pecans and reserve the remainder for garnish). On medium-low heat, simmer for 5 minutes (stirring occasionally).
Place wings in the saucepan with the peanut butter sauce and continue to simmer for another 2 minutes. Transfer wings to a serving platter and sprinkle with the chopped pecans and green onions. Wait until you taste these…..they are so delicious!
