  • 1 Tbsp. Olive Oil
  • 1 Tsp. Onion Powder (divided)
  • 1 Tsp. Garlic Powder (divided)
  • 2 Tsp. Italian Seasoning (divided)
  • 1 Tsp. Salt (divided)
  • 1 Tsp. Pepper (divided)
  • 1 Medium Onion (sliced)
  • 45 Medium Russet Potatoes (peeled and quartered)
  • 34 Medium Carrots (peeled and sliced)
  • 1 14oz. Can Diced Tomatoes
  • 1 10oz. Can Tomato Paste
  • 2 cups Beef Broth
  • 1/4 cup Water
  • 1 Can Green Beans (drained)

Instructions

  1. In a large pot, cook the lean ground beef over medium heat until browned. Season with half of the onion powder, garlic powder, and Italian seasoning, along with salt and pepper.
  2. Add the sliced onion and continue cooking until the onion is softened. Next, add the potatoes, carrots, and remaining seasonings. Then, add diced tomatoes, tomato paste, and beef broth to the pot. Stir well to combine all the ingredients.
  3. Bring the stew to a boil and then reduce the heat to low. Cover the pot, let it simmer for about 20-30 minutes, stirring occasionally, and continue cooking until the potatoes and carrots are tender. Finally, add the drained green beans and water to the stew and let it cook for an additional 5 minutes.
