Italian Spaghetti Pasta Salad

Try this delicious Italian Spaghetti Pasta Salad recipe. Take it to those summer barbecues and parties. It’s a great cool and refreshing pasta salad anytime.

Ingredients

  • 1 lb. Box Thin Spaghetti
  • 1 Tbsp. Kosher Salt
  • 2 Tbsp. Olive Oil
  • 2 Cucumbers (diced)
  • 1 10oz. Package Cherry or Grape Tomatoes (sliced in half)
  • 1 Small Red Onion (finely diced)
  • 1 4oz. Can Sliced Black Olives (drained)
  • 1 Red Bell Pepper (diced)
  • 1 5oz. Bag Pepperoni Minis
  • 1/2 Cup Grated Parmesan Cheese

Salad Dressing:

  • 1 Tsp. Black Pepper
  • 2 Tbsp. Italian Seasoning
  • 1 Tbsp. Sugar
  • 1 Tsp. Kosher Salt
  • 1 Tsp. Minced Garlic
  • 1/2 Cup Red Wine Vinegar
  • 1 Cup Virgin Olive Oil

Instructions

  1. Fill a large stockpot with water and bring to a boil on medium heat.  Then add 1 tbsp. kosher salt and the spaghetti, and cook according to package directions, or until tender.  Drain the spaghetti and transfer into a large bowl, then gently stir in 2 tbsp. olive oil to coat the spaghetti.  Place the spaghetti in the refrigerator to chill for about 1 hour.
  2. Once the spaghetti is chilled, add cucumbers, cherry tomatoes, red onions, black olives, red bell peppers, the pepperoni minis, and toss together well.
  3. In a pint mason jar with a lid, add all the salad dressing ingredients together and shake well.  Pour over spaghetti salad and toss to coat.
  4. Chill in the refrigeration for about 4 hours or overnight. Serve with a sprinkle of parmesan cheese and a pinch of black pepper!
