- In a cast iron skillet on medium heat, add ground beef and onion. Cook until it’s no longer pink.
- Add Taco seasoning, cumin, red pepper flakes, and chili powder. Then, stir in the minced garlic and let it cook for 1 to 2 minutes.
- Add in Rotel, tomato paste, and half of the diced green chilies.
- Mix Masa with an equal amount of water, then stir it into the mixture. Let it cook for about 2 to 3 minutes. Then, stir in kidney beans.
- Sprinkle a layer of ½ of the Cheddar Jack cheese, then about half of the Fritos. Then sprinkle half of the shredded Cheddar Cheese on top.
- Gently spoon the meat mixture over the first layer of Fritos and cheese, and then sprinkle a layer of the remaining Fritos and cheese over the top.
- Place in the oven on broil for 1 to 2 minutes to melt the cheese (be careful not to let it burn).
Serve warm and top with onion, tomatoes, green chilies, and even sour cream, and enjoy!
