Fritos Frito Pie

If you’re looking for a quick and easy dinner option or a crowd-pleasing dish for your next gathering, this Frito Pie recipe will surely hit the spot. Packed with flavorful ingredients and topped with crunchy Fritos, this recipe will leave you wanting seconds. 

Ingredients

  • 1 lb. Lean Ground Beef
  • 1 Medium Sweet Onion (diced)
  • 1 Tbsp. Taco Seasoning
  • 1 Tsp. Ground Cumin
  • 1/2 Tsp. Red Pepper Flakes
  • 1 1/2 Tbsp. Chili Powder
  • 1 Tbsp. Minced Garlic
  • 1 Can Rotel Tomato and Green Chilies (undrained)
  • 1 6oz. Can Tomato Paste
  • 1 4oz. Can Diced Green Chilies (divided)
  • 2 Tbsp. Masa or Corn Meal + 2 Tbsp. Water
  • 1 Can Red Kidney Beans (drained, rinsed)
  • 2 cups Fritos Corn Chips
  • 1 1/2 cups Shredded Cheddar Jack Cheese (divided)
  • 1 cup Shredded Cheddar Cheese

Instructions

    1. In a cast iron skillet on medium heat, add ground beef and onion. Cook until it’s no longer pink.
    2. Add Taco seasoning, cumin, red pepper flakes, and chili powder. Then, stir in the minced garlic and let it cook for 1 to 2 minutes.
    3. Add in Rotel, tomato paste, and half of the diced green chilies.
    4. Mix Masa with an equal amount of water, then stir it into the mixture. Let it cook for about 2 to 3 minutes. Then, stir in kidney beans.
    5. Sprinkle a layer of ½ of the Cheddar Jack cheese, then about half of the Fritos. Then sprinkle half of the shredded Cheddar Cheese on top.
    6. Gently spoon the meat mixture over the first layer of Fritos and cheese, and then sprinkle a layer of the remaining Fritos and cheese over the top.
    7. Place in the oven on broil for 1 to 2 minutes to melt the cheese (be careful not to let it burn).

Serve warm and top with onion, tomatoes, green chilies, and even sour cream, and enjoy!
