Straight from the garden or the produce aisle, you can make this healthy cucumber onion and tomato salad! You will love this perfect cool summer salad!
3 Cucumbers (peeled leaving strips of green, and sliced)
1 Sweet Vidalia Onion (cut in half and thinly sliced)
1 1/2 Cups Cherry Tomatoes (cut in half)
1 Tbsp. Finely Chopped Fresh Dill
Salad Dressing:
1/2 Cup Cold Water
1/2 Cup Apple Cider Vinegar
1/4 Cup Extra Virgin Olive Oil
1 Tsp. Salt
1 Tsp. Black Pepper
2 Tbsp. Sugar
Instructions
In a large mixing bowl, add cucumbers, onions, cherry tomatoes, and finely chopped dill.
In a separate bowl, add water, apple cider vinegar, olive oil, sugar, salt, and pepper. Mix together well, then pour over salad and toss until everything is coated well.
Chill in the refrigerator for 2 to 4 hours. Serve and enjoy!
