2 lbs. Ground Beef (85/15)
7 Strips of Bacon (chopped)
1/2 Cup Diced Yellow Onion
1/2 Cup Diced Bell Peppers (Green and Red)
1/2 Cup Diced Celery
2 Cans Diced Tomatoes
6 Roma Tomatoes (chopped)
1 Jalapeno Pepper (diced - remove each end and the seeds)
1/2 Cup Beef Broth
1 Tbsp. Minced Garlic
1/2 Tbsp. Brown Sugar
2 Tbsp. Chili Powder
1 Tbsp. Paprika
1/2 Tsp. Cumin
1 Tsp. Red Pepper Flakes
1/4 Cup of Strong Brewed Coffee
1 Tsp. Salt
Corn Tortillas
Corn Chips
Shredded Cheddar Cheese
Shredded Pepper Jack Cheese
Sour Cream
Green Onions or Chives
In a Dutch oven pot on medium heat, cook the ground beef until browned. Then drain and transfer the ground beef to a bowl and set aside.
Add chopped bacon in the Dutch oven and cook on medium-low heat until browned. Leave the bacon and the bacon grease in the pot and add diced onions, diced bell peppers, and diced celery. Simmer on medium heat for 5 minutes to soften the vegetables.
Pour 1 can of diced tomatoes in a blender and blend until smooth. Then add the tomatoes in the blender, 1 can of diced tomatoes (drained), ½ of the chopped Roma tomatoes, and diced jalapeno pepper into the Dutch oven pot with the bacon and the vegetables.
Add the browned beef back into the Dutch oven pot. Then add beef broth, garlic, brown sugar, chili powder, cumin, paprika, red pepper flakes, and strong brewed coffee.
Cover and simmer for 45 to 55 minutes.
Season with salt, and add the rest of the diced Roma tomatoes. Simmer for another minute or two and it’s ready to serve.
Put a corn tortilla in the bottom of a bowl, add some chili with corn chips around the edge. Then top it with shredded cheddar and pepper jack cheese, a dollop of sour cream, and a sprinkle of chives!

1 Tbsp. Onion Powder
1 Tbsp. Garlic Powder
1/2 Tsp. Ground Cumin
1 Tbsp. Chili Powder
1 10oz. Can Mild Diced Tomatoes and Chilies
3 Tbsp. Tomato Paste
1/2 Tsp. Worcestershire Sauce
2 Tbsp. Brown Sugar
1/2 Bottle of Beer (your choice)
In a cast iron skillet on medium heat, add the ground beef and use a spatula or spoon to break it up into small pieces while it is cooking. Then add the onions and cook until the ground beef is browned and the onions are tender.
In a small bowl, mix together the red pepper flakes, black pepper, salt, oregano, onion powder, garlic powder, cumin, and chili powder. Then sprinkle the seasoning mixture on the ground beef.
Stir in the diced tomatoes and chilies, tomato paste, Worcestershire sauce, brown sugar, and beer. Turn the heat down to low and simmer for 30 to 40 minutes and it’s ready to serve.

1 Cup Sour Cream
1 Cup Shredded Monterey Jack Cheese
Toppings:
Monterey Jack Cheese, Sour Cream, Crispy Onions, Tortilla Chips and chopped Cilantro.
In a crockpot, add in shredded chicken, chicken broth, 2 cans of whole drained beans, 1 can of drained beans mashed with a fork (to thicken the chili), 1 can Diced Tomatoes and green chilies, 1 can green chiles, 1 can drained sweet corn, and sour cream.
In a skillet on medium heat, add olive oil and butter. When the butter is melted, add the onions and sauté 3 to 4 minutes, then add the garlic and sauté for 1 more minute.
Add the sautéed onions and garlic into the crockpot. Then add granulated chicken bouillon, red pepper flakes, chili powder, salt and pepper.
Cover and cook on high 3 to 4 hours or on low 5 to 6 hours (add shredded cheese the last 15 minutes of cooking time).
Serve and top with more shredded cheese, sour cream, crispy onions, tortilla chips and garnish with cilantro.

1 6 oz. Can Tomato Paste
2 8 oz Can Tomato Sauce (please note the video says one can it should be two)
2 tbs Worcestershire Sauce
2 Lbs. Ground Beef
1 Medium Chopped Onion
2 Tsp Chili Powder
1/4 Tsp Pepper
1/2 Tsp ground Cumin
1/2 Tsp Salt
1 1/2 Packages of Hot dogs (about 12)
2 Cups Shredded Cheddar Cheese
In a bowl mix together tomato paste, tomato sauce and Worcestershire sauce and set aside.
In a skillet on medium heat on your stove, brown up you lean ground beef with chopped onion. Add in chili powder, pepper, ground cumin and salt. Once it’s browned remove from skillet pan and set aside. In that same skillet add in your chopped-up hot dogs. You can leave them whole if you prefer. Cook hot dogs for about 10 min.until lightly browned.
Pre-heat your oven to 400 degrees
In a 9 X 13 baking dish, add in your ground beef and hot dogs. Pour in the tomato sauce mixture and mix into meat thoroughly. Top with two cups of sharp cheddar cheese.
Place in the oven for approximately 20 min. uncovered until the cheese is fully melted.
